Signature Dishes
What sets us apart from other caterers? Simply, our food. The Cuisine Group is garnering a reputation amongst customers for our focus on classic elegance and innovative combinations. With this in mind we have created two signature dishes to showcase our passion for fine food.
The Cuisine Group's Signature Canapé
Lightly fried sushi rice with black sesame seeds forms a foundation supporting a fine slice of rare Australian Wagyu beef that has been seared and then de-glazed in rice wine and wrapped around fresh Asian greens. The canapé is then dressed with subtle Asian flavours of chilli, ginger, coriander, soy, lemon grass and more.
The inspiration behind the canapé is our belief that Australia has some
of the best wagyu beef in the world which is evident in our exports to Japan and
the rest of the world.
This coupled with an abundance of fresh Asian ingredients grown in Australia
inspired us to blend the two ingredients, delivering a canapé that is a
fusion of textures, colours, taste and cultures.
The Cuisine Group's Signature Main
A hearty 180gm piece of Kahawai salmon is rolled with a thin veil anchovy butter creating a roulade. It is then wrapped in pancetta and seared creating a delectable contrast of textures between the crisp pancetta and the rich smoothness of the salmon subtly infused with the flavours of the anchovy butter. The salmon is served with a rustic mash that is accentuated with prawn, preserved lemon and wilted spinach.
The primary inspiration for The Cuisine Group's main signature dish was the
Kahawai salmon which is mainly found on the east coast of Australia. It is an
ingredient that is readily available thus ensuring the highest regard for freshness
at all times and embraces Australia's natural passion and affinity with seafood.
This is in turn reflected in the mash with the use of preserved lemons. The dish
is accented with the use of chive and chilli and capsicum infused oils making
the dish lighter and more suitable for the Australian climate.
